We offer choices in abattoir services.
Both “Custom Butchering” and USDA inspected slaughter and processing are available. We process: Beef, Bison, Swine, Sheep, Goats, Stag, etc. We harvest primarily on Wednesdays…but also can schedule for large or special slaughters on Mondays and Fridays.
We include two week dry aging in the processing and additional time is available for an extra charge based on hanging weight.
We offer various Plastic or paper wrapping materials.
We also vacuum pack products.
Private labeling is available and we collaborate with a local commercial printing firm to design and print unique labels for our customers at a nominal price. NOTE: Labels require a minimum of two weeks to process. First time customers need to build this lead time into their schedules for processing.
Lil Ponderosa Abattoir also creates bologna, beef sticks, smoked bacon, hams and other cured items. Jerky is a favorite.
