Lil’ Ponderosa Enterprises is the creation of Grass Fed Rancher extraordinaire “Uncle” Bob Boyce with pioneering farm to table chefs Sean Cavanaugh and Michael Carson along with the marvelous butchering skills of Joseph Melius and a lot of support from Uncle Bob’s protégée Neil Darhower.
Uncle Bob has been raising the finest grass fed and finished Black Angus cattle for pioneering farm to table and Lancaster’s landmark restaurant “John J. Jeffries” for many years. “JJJ” is owned by chefs Cavanaugh and Carson.
Bob led the team down the rabbit hole to purchase a USDA inspected abattoir, make dramatic renovations and complete an organic certification.
Uncle Bob identified a large need in his local farming community for the processing and dry aging of local live stock.
Under Joseph Melius’ careful direction and USDA inspection all local beef is custom cut and dry aged.

The highest quality beyond organic beef is grass fed and finished, dry aged, meticulously butchered, vacuum packed, frozen and delivered to your home.
Our team not only raises and nurtures the Black Angus while being responsible stewards of the land, we also process, butcher and package our own meat directly to your home. Farm to Home done conveniently so it fits your demanding schedule.
To achieve the highest possible quality we decided to produce our beef from a “closed herd” of purebred Black Angus Cattle. No new breeding animals have been brought onto our farm in over 20 years. They are fed a grass only diet — from birth to harvest. None of our cattle have eaten grain or corn during their lives! They graze in a picturesque setting, on rolling hillsides, in a stress free environment. In the winter they are fed hay grown on the farm.
We use no chemicals, growth hormones, antibiotics or artificial additives.
We moved to the farm April 25, 1986. We started to renovate the farm, immediately, preparing it to become a working farm. Having dozed and cleared years of trash and brush … we constructed several miles of fence, installed watering systems and erected several barns. We then purchased our Purebred Angus stock from several farms of good repute who were grazing their cattle.
